Today is also a significant day with regard to Covid-19 popping up here in the US. Lots to process-- so I started the Ideal Protein Eve with a very yummy Vanilla Crispy Square. Tamihttp://www.blogger.com/profile/11350717238404681462noreply@blogger.com0tag:blogger.com,1999:blog-1960905792488168785.post-23242140716912904702015-04-28T18:56:00.001-06:002015-04-28T18:56:18.108-06:00Infant Mental Health Recently I saw a very young mother with her baby. She did not make eye contact with me and did not answer any questions with more than a one word answer. Her father was also present during the procedure and answered all questions that were directed to her. The mother's baby was present for a follow up procedure after his birth. The mother was 16 years old and the family had come to the clinic with transportation provided by an inner city faith based group. I observed the mother to hold her baby with him facing away from her. I observed the baby to interact with others by maintaining eye contact, pulling his hand to his mouth and drinking from a bottle with no spilling or choking.
While discussing today's results with his mother I noted she stroked his head repeatedly, pet him on the back but I did not observe her attempt to maintain eye contact or speak to her child.
Additional concerns I had included the mother's twin sister had a baby who was 4 months older than this baby. Sooooo here goes with Recipe #1 is from Full Plate Diet (as is the picture!)I changed the cooking of the carrots and celery --- both should cook with the onions for just a little bit):

Tuscan Minestrone Soup

Calories: 89
Fat: 2.3g
Sodium: 442mg
Total Carbs: 16.4g
Dietary Fiber: 3.4g
Protein: 3.9g

1/3 cup diced onion
1 teaspoon extra-virgin olive oil
4 cups water
1 cup carrots, sliced into 1/2" pieces
1/3 cup celery, sliced into 1/2" pieces
1 cup zuccini, sliced into 1/4" pieces
1 cup diced canned tomatoes
2/3 cup cooked whole-grain elbow macaroni (used penne pasta in picture)
1 cup kidney beans, low-sodium canned, drained
1 teaspoon salt
1 teaspoon dried sweet basil
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1 bay leaf

Cook macaroni in plain boiling water, no oil or salt added, according to the package directions, until al dente. Saute onion in oil until tender, about 3-4 minutes. Add carrots and celery and cook for 3-4 more minues. Add water and cook until tender, about 15 minutes. Add remaining ingredients and simmer until vegetables are done, about 15-20 minutes more. Remove bay leaf and serve hot.

REVIEW: I love love this soup! It reheats quite well and is perfect for lunch the next day! I added some sliced avocado to the lunch version and feel it added a little more sweetness and color to the lunch version.

Thumbs Up!Tamihttp://www.blogger.com/profile/11350717238404681462noreply@blogger.com0tag:blogger.com,1999:blog-1960905792488168785.post-49109517914750019882010-04-15T05:36:00.001-06:002010-04-15T05:36:26.753-06:00Tamihttp://www.blogger.com/profile/11350717238404681462noreply@blogger.com0tag:blogger.com,1999:blog-1960905792488168785.post-43771303782619150592009-08-19T05:57:00.002-06:002009-08-19T06:09:02.344-06:00A-li-he-li-s-di Tso-i-ne-i-ga<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 320px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjcg-7cppiCa0ZYjAYJ5CJ5yFEUaYKmo58DdDMeuDHIKbKXr5UlJs3qoYZhjWVJq1ft32nJJpcvhiNcfMzV0-L40UlqBrVkTFU0vUjiI4DIiOx9uY0wEW1HYS05JMuarCVjAvSTcBfDpXM/s400/CN_wallpaper.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5371645715460880642" />
Happy Wednesday the day after the "Big Event". I am about to move the cilantro and basil seedlings to larger pots and this will leave cucumbers and swiss chard for later this week.

Interestingly, I have always felt gardening reminded me too much of my mother --- the excellent gardener --- and therefore I never expanded to edible plants! This is sticking my toe in the large ocean of learning to grow my food and I know I will enjoy the next logical step ---learning how to store food. So with composting, gardening and trying to keep the trash down to only one can a week --- I feel we are making a dent on our changes but something still feels missing. I've resigned myself to trusting this 'process' and being open to more changes in my small existence here in landlocked OKC.Tamihttp://www.blogger.com/profile/11350717238404681462noreply@blogger.com1tag:blogger.com,1999:blog-1960905792488168785.post-63947170716011530922009-03-01T19:23:00.004-06:002009-03-01T19:56:52.122-06:00Basil, Cilantro and Lettuce at Elder Haus<img style="float:right; margin:0 0 10px 10px;cursor:pointer; cursor:hand;width: 400px; height: 300px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgiXIyvuEQB4BAMyirZbKgeojWCrcNmnyf0WSmaJZEs6RCrZSkK7z18a7juY4cgMHzmB83bxtDfrJfYWRQp-GXopGAWPW38EQZnOrn2WY9ffLtr6l4LRFtkjZC8fK0xHrIKv2YUvg86EyY/s400/P1110325.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5308400570504443250" />

Well here at Elder Haus we are getting ready to go full force on gardening --- Patrick is going to check the soil pH and hopefully I can get all of the lettuce planted this week! This year's theme is Sustainability - Reduce Reuse Recycle and Rebuy. Since I get to decide (please someone take this from me ---- not!) I want to impress on our little ones the significance of everything we 'use' to live here in Oklahoma. Additionally, Oklahoma isn't the most "green" state so it could be more challenging than I anticipate.

So, this also leads to several changes I am making in my little neck of the world. As of January 1, 2009 I have pledged to purchase nothing for 3 months --- except makeup or hair products --- some things are hard to wean off of. We have also started composting. Well, step 1 of composting is happening here in Elderville --- we have been collecting food scraps for 4 weeks!

Stay tuned tomorrow for the beginning of the compost!
