Busy Weekend and only Six weeks to Go!!!



We are now done with this very busy weekend. Erin and Tim left today after a whirlwind of painting furniture . . . more pictures of this to follow . . . nursing bra shopping . . . Patrick and Tim's Quasi modo experience . . . church . . . lunch with the in-laws and cooking and cooking cooking. So as my end of the weekend celebration gift to all of you lucky people who read this . . . here is my mother-in-laws recipe for Oatmeal Cookies! These are easily the most yummy cookie recipe there is!
Mrs Tucker's Refrigerator Oatmeal Cookies

1/2 cup butter, 1/2 cup Crisco, (don't use all butter, it changes the finished product) 1 cup sugar, 1 cup brown sugar, 1tsp salt, 1 tsp cinnamon, 1/2 cup chopped pecans, 2 beaten eggs, 1 and 1/2 cups flour , 1 tsp soda. 1tsp vanilla,3 cups quick oats.

Cream butter and Crisco with sugars, add beaten eggs and vanilla. Stir. Sift salt, cinnamon and soda with flour. Add to butter mixture . Mix well, just until flour is absorbed. Add oats and nuts. Form into a roll on long sheet of waxed paper. Roll to cover and again with foil. Freeze. Cut 1/2 inch slices and bake on ungreased cookie sheet 350 for 10 to 12 min.

Yummy! I will try these when M is out for surgery. He will need treat! I can't believe the countdown. What an exciting time for your family. You are going to have a blast!

Quasi modo quest? I believe it was a coati mundi and we found it quite by accident.
